Bottarga and crab (in its own broth)


4 medium sized crabs (fresh or frozen)
4 teaspoons of bottarga powder
1 large onion (finely chopped)
1 tsp of grated ginger
½ of a fennel (finely chopped)
½ a clove of garlic (finely chopped)
1 glass of Malagouzia wine (or Chardonnay)
150 ml of water
2 tbsp of butter
4 tbsp of extra virgin olive oil
zest and juice of ½ of a lime
4 tbsp of mustard sprouts
natural sea salt and freshly ground pepper for seasoning


Saute the onion in olive oil (in high heat). Once it turns to translucent, add the garlic, ginger, fennel and crab and stir for 2 to 3 minutes. Deglaze with the wine and once the alcohol evaporates, add water, salt and pepper, lower the heat (to medium-low) and cover the pan with a lid. 10 minutes later, remove the crabs from the pot, carve their belly with a knife and keep them warm. Increase the heat, add the butter and stir until it will be incorporated into the sauce, add the juice and zest of the lime. Stir for a minute more and add the bottarga powder. Remove the pot from the heat.

Serve in a bowl, a ladle of sauce, a piece of crab and finish the dish with the mustard sprouts.

Cow's Graviera Dodoni

A hard cheese manufactured with the traditional cheese making method of Epirus. It is produced exclusively from pasteurized cow's milk and has a distinctive sweet taste. Enjoy it as it is, as an accompaniment, in sandwiches and toasts or use it in cooking!

Sunny Side Up Eggs With Wild Asparagus and Trikalinos Bottarga

INGREDIENTS (2 serves)

2 green asparagus cut in four
4 slices of bread
4 sprigs of chives, chopped
2 eggs
1 tablespoon of Trikalinos Bottarga Powder
8 fine slices of Trikalinos Bottarga
Zest of a lime
Freshly ground pepper
2 spoonfuls of Olive Oil
1 spoonful of butter

Sauté the bread slices in butter, until they turn to golden. Remove the bread from the pan and sprinkle the bottarga powder over the bread slices. Lay the slices on the dishes. Sauté the asparagus in one spoonful of olive oil and remove from the pan. Sprinkle with the lime zest and place them over the bread. Pour in the pan the remaining olive oil and fry the eggs for 6 minutes over medium heat, until the eggs turn to golden. Add the chives and remove the pan from the heat. Serve each egg on top of the crispy round bread slice and accompany with the bottarga slices and chives. Season with freshly ground pepper.



Kefalotyri Dodoni

A hard traditional cheese made exclusively from pasteurized goat's and sheep's milk. Enjoy it as it is, make it into "saganaki" or grate it over pasta. Its slightly salty taste will drive you crazy!
