Chios, a place full of memories and fragrances! From these fragrances probably got "drunk'' John Seraphim and created almost a half century before, the first ouzo from Chios, ''Apalarina''.
Starting before sunrise, we collect anise and crystal water from distant water springs, for ouzo. When everything has been carefully prepared, we mixed them in traditional cauldrons, lit the fire and simmer for hours until the first sound of the ouzo drips start falling.
